Can a person become toxic by ingesting small amounts of poison over time?

like in animes like ninja scroll and the movie shinobi ? could a person build up an immunity and sortve stockpile poisons for further use ? or just plain old die? and if they just die why does the Japanese ninjas in anime always have a person who can do this?
